- 1 pound ground beef
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 teaspoons Italian seasoning

- 8 ounces cheese tortellini
- 4 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 2 cups fresh spinach
- 1/2 cup grated mozzarella cheese
- Fresh basil for garnish
Instructions
- Preheat oven to 375°F. Mix ground beef, breadcrumbs, Parmesan, egg, Italian seasoning, salt, and pepper. Form into small meatballs.
- Arrange meatballs on a baking sheet and bake for 15 minutes until cooked through.
- In a large pot, combine chicken broth, diced tomatoes, and bring to a boil.
- Add baked meatballs and tortellini to the broth. Cook for 8-10 minutes, until pasta is tender.
- Stir in spinach and cook until wilted, about 2 minutes.
- Serve hot, topped with mozzarella cheese and fresh basil.

- You can substitute beef with turkey or chicken for a leaner option.
