- 1 pound Italian sausage, casings removed
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 (14.5 oz) can diced tomatoes
- 1 teaspoon Italian seasoning
- 9 ounces refrigerated tortellini
- 2 cups fresh spinach, chopped
- 1/2 cup grated Parmesan cheese
Instructions
- In a skillet, cook sausage over medium heat until browned. Transfer to slow cooker.
- Add onion, garlic, broth, diced tomatoes, and Italian seasoning to the slow cooker. Stir to combine.
- Cover and cook on low for 6 hours.
- Add tortellini and spinach during the last 30 minutes of cooking.
- Serve hot, garnished with Parmesan cheese.

- You can substitute turkey sausage for a leaner option.
