- 1 lb boneless, skinless chicken breasts
- 4 cups chicken broth
- 1 can (14.5 oz) crushed tomatoes
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 1/2 cup grated parmesan cheese
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 tsp dried basil
- 1 tsp dried oregano
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Place chicken breasts in the crockpot and pour in chicken broth, crushed tomatoes, and marinara sauce.
- Add diced onion, minced garlic, basil, oregano, salt, and pepper.
- Cover and cook on low for 6-7 hours or high for 3-4 hours until chicken is cooked through and tender.
- Remove chicken, shred it with two forks, and return to the soup.
- Stir in shredded mozzarella and grated parmesan cheese until melted and creamy.
- Serve hot, garnished with fresh basil and extra cheese if desired.
Notes
- You can substitute shredded cooked chicken or rotisserie chicken for ease.
- For added spice, include red pepper flakes.
- Use fresh basil for a brighter flavor boost.
