Ingredients

  • 1 lb beef stew meat, cubed
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 3 carrots, diced
  • 2 potatoes, diced
  • 1 cup corn kernels
  • 1 can diced tomatoes (14.5 oz)
  • 4 cups beef broth
  • 1 tsp paprika
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Brown the beef cubes until seared then remove and set aside.
  2. Sauté onions and garlic until translucent.
  3. Add carrots, potatoes, paprika, cumin, salt, and pepper. Cook for 5 minutes.
  4. Return beef to the pot, add diced tomatoes, corn, and beef broth. Bring to a boil.
  5. Reduce heat to low, cover, and simmer for 1.5 hours until beef is tender.
  6. Adjust seasoning and serve hot.
