- 1 lb beef stew meat, cubed
- 2 tbsp olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 3 carrots, diced
- 2 potatoes, diced
- 1 cup corn kernels
- 1 can diced tomatoes (14.5 oz)
- 4 cups beef broth
- 1 tsp paprika
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium-high heat. Brown the beef cubes until seared then remove and set aside.
- Sauté onions and garlic until translucent.
- Add carrots, potatoes, paprika, cumin, salt, and pepper. Cook for 5 minutes.
- Return beef to the pot, add diced tomatoes, corn, and beef broth. Bring to a boil.
- Reduce heat to low, cover, and simmer for 1.5 hours until beef is tender.
- Adjust seasoning and serve hot.
Notes
- You can add beans or green beans for extra flavor.
- Best served with crusty bread or cornbread.
