Instructions
- Cook the chopped carrots in boiling water until tender, about 10-12 minutes. Drain well.
- Transfer the cooked carrots to a bowl and mash with a fork or potato masher until chunky but smooth.
- Drizzle with olive oil and honey or syrup if using, then season with salt and pepper. Mix well.
- Garnish with freshly chopped herbs before serving.
Notes
For extra flavor, add a squeeze of lemon or a sprinkle of chili flakes. Adjust honey for sweetness or omit for a savory version.
