- 8 ounces whole wheat pasta
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 pound boneless, skinless chicken breasts, cut into strips
- 1 cup cherry tomatoes, halved
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
Instructions
- Cook the whole wheat pasta in boiling salted water according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and cook for 1 minute until fragrant.
- Add chicken strips to the skillet, season with salt and pepper, and cook until browned and cooked through, about 5-7 minutes.
- Stir in cherry tomatoes and cook for an additional 2 minutes until they soften slightly.
- Add cooked pasta to the skillet, sprinkle with Parmesan cheese, and toss until well combined and heated through.
- Garnish with chopped parsley before serving.
Notes
- You can substitute spinach or kale for a greener version.
- For extra flavor, add a splash of lemon juice before serving.
