- 1 cup pineapple chunks (fresh or canned)
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 2 tablespoons olive oil
- 2 tablespoons soy sauce

- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- In a small bowl, whisk together soy sauce, honey, garlic powder, paprika, salt, and pepper.
- Place chicken breasts on a sheet pan lined with parchment paper.
- Brush the chicken with the sauce mixture, then arrange pineapple chunks and sliced peppers around the chicken.
- Drizzle everything with olive oil and additional sauce if desired.
- Roast in the oven for 20-25 minutes until chicken is cooked through and vegetables are tender.
- Optional: Garnish with chopped cilantro before serving.

- For extra flavor, marinate chicken in sauce for 30 minutes prior to baking.
