Ingredients
Scale
- 1 cup of fresh mozzarella balls (bocconcini)
- Salami slices (thin-cut works best)
- Black olives (pitted for the pupils)
- Fresh basil leaves (optional, for added color)
- Toothpicks or small skewers
- Olive oil (for brushing)
- Salt and pepper to taste
Instructions
- Drain the mozzarella balls and pat dry. Gently shape if needed to resemble eyeballs.
- Wrap each mozzarella ball with a slice of salami, securing with a toothpick if necessary.
- Spear a black olive with a small toothpick or fork, then place it on top of the mozzarella to mimic the pupil. Add a dab of olive tapenade or black food coloring for realism.
- Optional: Place a basil leaf beside the eye for color. Brush the salami with olive oil for a shiny appearance and season with salt and pepper if desired.
Notes
- Assemble these eyeball appetizers just before serving to prevent sogginess.
- Use high-quality mozzarella for the best appearance.
- For variety, try different colored olives or small cherry tomatoes for pupils.
- You can prepare components ahead of time and assemble right before presentation.
