- 4 salmon fillets
- 2 ripe mangoes, diced
- 1 red bell pepper, diced
- 1 small red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons lime juice
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat grill to medium-high heat.
- Brush salmon with olive oil and season with salt and pepper.
- Grill salmon for 4-5 minutes per side until cooked through.
- Meanwhile, in a bowl, combine diced mangoes, red bell pepper, red onion, cilantro, lime juice, salt, and pepper to make the salsa.
- Serve grilled salmon topped with mango salsa. Garnish with additional cilantro if desired.
Notes
- For extra flavor, add a pinch of chili flakes to the mango salsa.
- This dish pairs well with coconut rice or a light green salad.
