Ingredients

  • 4 large bell peppers, halved and seeded
  • 1 lb ground beef or turkey
  • 1 cup cooked rice
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped onions
  • 2 cloves garlic, minced
  • 2 tbsp taco seasoning
  • 1 tbsp olive oil
  • Sour cream and fresh cilantro for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and cook onions and garlic until translucent.
  3. Add ground meat and cook until browned, then stir in taco seasoning.
  4. Mix cooked rice, diced tomatoes, and half of the cheese into the meat mixture.
  5. Stuff each bell pepper half with the meat and rice mixture, place in a baking dish.
  6. Top with remaining cheese and bake for 25-30 minutes until peppers are tender and cheese is melted.
  7. Garnish with sour cream and cilantro before serving.
