- 4 large bell peppers, halved and seeded
- 1 lb ground beef or turkey
- 1 cup cooked rice
- 1 cup shredded cheddar cheese
- 1/2 cup diced tomatoes
- 1/4 cup chopped onions
- 2 cloves garlic, minced
- 2 tbsp taco seasoning
- 1 tbsp olive oil
- Sour cream and fresh cilantro for garnish
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat and cook onions and garlic until translucent.
- Add ground meat and cook until browned, then stir in taco seasoning.
- Mix cooked rice, diced tomatoes, and half of the cheese into the meat mixture.
- Stuff each bell pepper half with the meat and rice mixture, place in a baking dish.
- Top with remaining cheese and bake for 25-30 minutes until peppers are tender and cheese is melted.
- Garnish with sour cream and cilantro before serving.
Notes
- Feel free to substitute ground beef with turkey or chicken for a healthier option.
- Adjust spice levels by adding hot sauce or chili powder.
- Use any cheese you prefer for topping.
