- 2 cups cooked brown rice
- 1 lb grilled chicken breast, diced
- 1 cup black beans, drained and rinsed
- 1 cup corn kernels
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1/2 cup chopped red onion
- 1/4 cup chopped cilantro
- Juice of 1 lime
- 1/4 cup sour cream (optional)
- 2 tbsp olive oil
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- Prepare the rice according to package instructions and set aside.
- In a bowl, toss diced chicken with chili powder, cumin, salt, pepper, and olive oil. Grill until cooked through and set aside.
- In a large bowl, combine cooked rice, black beans, corn, diced peppers, red onion, and cilantro.
- Add the grilled chicken on top and squeeze fresh lime juice over the mixture.
- Serve immediately with optional sour cream and extra cilantro for garnish.
