  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped cilantro

Instructions

  1. Season the chicken breasts with chili powder, cumin, smoked paprika, garlic powder, salt, and pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add chicken breasts and cook for 6-7 minutes per side until cooked through and golden brown. Remove and set aside.
  4. In the same skillet, add sliced bell peppers and cook for 3-4 minutes until tender.
  5. Return chicken to the skillet, top with shredded cheese, and cover until cheese melts, about 2 minutes.
  6. Garnish with chopped cilantro and serve hot.
