- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 cup shredded cheddar cheese
- 1/2 cup chopped cilantro
Instructions
- Season the chicken breasts with chili powder, cumin, smoked paprika, garlic powder, salt, and pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken breasts and cook for 6-7 minutes per side until cooked through and golden brown. Remove and set aside.
- In the same skillet, add sliced bell peppers and cook for 3-4 minutes until tender.
- Return chicken to the skillet, top with shredded cheese, and cover until cheese melts, about 2 minutes.
- Garnish with chopped cilantro and serve hot.
Notes
- You can substitute chicken breasts with chicken thighs for extra juiciness.
- For a spicier kick, add sliced jalapenos or hot sauce.
