- 1 pound (450g) smoked sausage, sliced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add sliced sausage and cook until browned, about 5 minutes. Remove and set aside.
- In the same skillet, add chopped onion and cook until translucent, about 3 minutes.
- Add minced garlic and cook for another 30 seconds.
- Stir in cumin, smoked paprika, chili powder, salt, and pepper.
- Add black beans and cooked sausage to the skillet, stirring to combine.
- Pour in chicken broth and bring to a simmer. Cook for 10 minutes to allow flavors to meld.
- Meanwhile, cook rice according to package instructions.
- Serve the sausage and bean mixture over cooked rice, garnished with fresh cilantro.

- Feel free to add diced bell peppers for extra flavor and color.
- This dish can be made spicy by adding chopped jalapenos or hot sauce.
- You can substitute the rice with cauliflower rice for a low-carb option.
