- 2 ripe mangoes, peeled and chopped
- 1 cup coconut milk (full-fat or light)
- 1-2 tablespoons honey or agave syrup (optional)
- Fresh lime juice (optional)
- 6-8 popsicle molds and sticks
Instructions
- Combine the chopped mangoes, coconut milk, honey (if using), and lime juice in a blender. Blend until smooth and creamy.
- Pour the mango coconut mixture into popsicle molds, leaving some space at the top.
- Insert sticks into each mold, ensuring they are centered. Cover with lids or plastic wrap.
- Freeze for at least 4-6 hours or overnight until fully solidified.
- To serve, run warm water over the outside of the molds for a few seconds and gently pull out the popsicles.
Notes
- Use frozen mango for easier blending or if fresh mango is unavailable.
- Adjust sweetness based on mango ripeness and personal preference.
- Add shredded coconut or mint leaves inside for extra texture and flavor.
- Wrap individual pops in plastic wrap for longer storage and to prevent freezer burn.
