- 1 pound ground beef
- 1 cup diced onions
- 1 cup diced bell peppers
- 1 can diced tomatoes (14.5 oz)
- 2 cups cooked rice
- 1 cup shredded cheddar cheese
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Add ground beef and cook until browned, about 5-7 minutes.
- Add diced onions and bell peppers to the skillet; cook until softened, about 3 minutes.
- Stir in diced tomatoes, garlic powder, salt, and pepper. Cook for 2 minutes.
- Mix cooked rice into the beef mixture, then transfer to a baking dish.
- Top with shredded cheese.
- Bake in the preheated oven for 15-20 minutes until cheese is melted and bubbly.
Notes
- You can add corn or peas for extra vegetables.
- For a spicy kick, add diced jalapenos.
