- 2 lbs boneless chicken thighs or breasts
- 1 cup soy sauce
- 1/2 cup honey
- 1/4 cup rice vinegar
- 3 cloves garlic, minced
- 1 teaspoon grated ginger
- 2 tablespoons cornstarch (optional for thickening)
- Sesame seeds and chopped green onions for garnish
Instructions
- Place chicken in the crockpot.
- In a bowl, whisk together soy sauce, honey, rice vinegar, garlic, and ginger.
- Pour sauce over chicken in the crockpot.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until chicken is tender.
- OPTIONAL: Remove chicken and set aside. Pour remaining sauce into a saucepan, bring to a boil, and thicken with cornstarch if desired.
- Serve chicken hot, garnished with sesame seeds and green onions, over rice or vegetables.
Notes
- Adjust the honey for sweeter or less sweet taste.
- The sauce thickening step is optional but adds a restaurant-quality glaze.
