  • 9 oz (255g) refrigerated or frozen tortellini
  • 4 cups (960ml) chicken broth
  • 1 cup (240ml) heavy cream
  • 1 cup (150g) cherry tomatoes, halved
  • 2 cups (60g) fresh spinach
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Grated Parmesan cheese for topping

Instructions

  1. Place chicken broth, garlic, Italian seasoning, salt, and pepper into the crockpot. Cook on low for 2 hours.
  2. Add shredded chicken and tortellini to the crockpot. Cover and cook for an additional 30 minutes.
  3. Stir in cherry tomatoes, spinach, and heavy cream. Cook for another 10 minutes until heated through.
