- 1 lb (450g) cooked chicken breast, shredded
- 9 oz (255g) refrigerated or frozen tortellini
- 4 cups (960ml) chicken broth
- 1 cup (240ml) heavy cream
- 1 cup (150g) cherry tomatoes, halved
- 2 cups (60g) fresh spinach
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Grated Parmesan cheese for topping
Instructions
- Place chicken broth, garlic, Italian seasoning, salt, and pepper into the crockpot. Cook on low for 2 hours.
- Add shredded chicken and tortellini to the crockpot. Cover and cook for an additional 30 minutes.
- Stir in cherry tomatoes, spinach, and heavy cream. Cook for another 10 minutes until heated through.
- Serve hot, garnished with Parmesan cheese and fresh herbs if desired.
Notes
- You can substitute cooked rotisserie chicken for shredded chicken.
- Use fresh tortellini for best texture, but frozen works well too.
- Adjust seasoning to taste for a more savory or spicy flavor.
