Instructions
- Prepare the crust: In a mixing bowl, combine flour, powdered sugar, and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Press into a baking pan and bake at 350°F (175°C) for about 15 minutes until lightly golden.
- Make the cream cheese filling: Beat softened cream cheese with granulated sugar and vanilla extract. Add the egg and mix until smooth. Spread evenly over the baked crust.
- Prepare the blueberry topping: Toss blueberries with cornstarch and sprinkle over the cream cheese layer. Optionally add lemon zest for extra zing.
- Bake the bars: Return to the oven and bake for an additional 25-30 minutes until the filling is set and blueberries are bubbly.
- Cooling and slicing: Allow cooling completely in the pan before cutting into squares for clean slices and better texture.
