- 1 cup unsalted butter, cold and cut into cubes
- 4 large eggs
- 1 ½ cups granulated sugar
- ¼ cup all-purpose flour
- 1/2 cup freshly squeezed lemon juice (about 2-3 lemons)
- Optional: Lemon zest for extra zing
Instructions
- Prepare the crust by combining flour and powdered sugar in a mixing bowl. Add cold butter and blend until the mixture resembles coarse crumbs. Press evenly into a parchment-lined 9×13 inch baking dish. Bake at 350°F (175°C) for 15-20 minutes until lightly golden.
- Whisk together eggs, granulated sugar, flour, and lemon juice until smooth. Stir in lemon zest if using.
- Pour the lemon mixture over the pre-baked crust.
- Return to the oven and bake for an additional 20-25 minutes until the filling is set and edges are lightly golden. Cool completely before slicing.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 5 days.
- For longer storage, freeze by wrapping tightly in plastic wrap and foil.
- Chill before serving to enhance citrus brightness and flavor meld.
