  • 1 lb boneless skinless chicken breasts, cut into bite-sized pieces
  • 1/4 cup soy sauce
  • 2 tablespoons honey or brown sugar
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 1 tablespoon cornstarch (optional, for thickening)
  • Sesame seeds and chopped green onions for garnish

Instructions

  1. In a small bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger to make the sauce.
  2. Heat a large skillet or wok over medium-high heat, add a little oil, and cook chicken until browned and cooked through, about 5-7 minutes.
  3. Add bell pepper and broccoli to the skillet, stir-fry for another 3-4 minutes until vegetables are tender-crisp.
  4. Pour the sauce over the chicken and vegetables, toss to coat evenly, cook for 2 more minutes.
  5. If desired, dissolve cornstarch in a small amount of water and stir into the skillet to thicken the sauce.
  6. Transfer to a plate, garnish with sesame seeds and green onions, serve hot.
