- 1 lb boneless, skinless chicken breasts, sliced
- 2 cups broccoli florets
- 1 red bell pepper, sliced
- 2 carrots, sliced
- 3 tablespoons soy sauce
- 2 tablespoons honey
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- Sesame seeds for garnish
Instructions
- In a small bowl, mix soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger to create the sauce.
- Heat a large skillet over medium-high heat and add a little oil. Cook chicken until browned and cooked through, about 5-7 minutes.
- Add vegetables to the skillet and stir-fry for another 4-5 minutes until tender but still crisp.
- Pour the teriyaki sauce over the chicken and vegetables, toss to coat evenly, and cook for an additional 2 minutes.
- Serve hot, garnished with sesame seeds.
