- 4 large Russet potatoes, sliced or cubed
- 1 lb smoked sausage, sliced
- 1 cup shredded cheddar cheese
- 1/2 cup ranch dressing (or ranch seasoning mix)
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 tbsp olive oil
- Salt and black pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C). Wash and prepare the potatoes by slicing or cubing them. Slice the smoked sausage into bite-sized pieces. Dice the onion and mince the garlic. Set all aside.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add diced onion and minced garlic, sauté until translucent and fragrant, about 3-4 minutes.
- Add sliced smoked sausage to the skillet; cook until browned, about 5 minutes. Remove from heat.
- In a large mixing bowl, combine the cooked sausage, potatoes, sautéed aromatics, ranch dressing, and half of the shredded cheese. Season with salt and pepper. Mix thoroughly.
- Transfer the mixture to a greased baking dish. Sprinkle the remaining cheese on top.
- Cover with foil and bake for 35-40 minutes, or until potatoes are tender. Remove foil and broil for 2-3 minutes until bubbly and golden.
Notes
- You can substitute smoked sausage with chicken or turkey sausage for a leaner option.
- To make this dish keto or low-carb, replace potatoes with cauliflower florets.
- For added flavor, sprinkle chopped chives or parsley before serving.
