Ingredients

  • 1 sheet puff pastry, thawed
  • 4 slices ham
  • 1 cup grated Gruyere or Swiss cheese
  • 2 large eggs
  • 1 tablespoon butter

Instructions

  1. Preheat the oven to 400°F (200°C). Roll out the puff pastry sheet on a lightly floured surface and cut into two rectangles.
  2. Place each pastry rectangle on a baking sheet lined with parchment paper. Bake for 15 minutes or until golden and flaky.
  3. Remove from oven and layer ham and cheese on top of each baked pastry rectangle.
  4. Return to oven for an additional 5 minutes until cheese melts.
  5. Meanwhile, fry eggs in butter until the yolks are sunny-side up, season with salt and pepper.
  6. Top each puff pastry with a fried egg, garnish with fresh herbs, and serve immediately.
