- 1 pound ground beef
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 cup enchilada sauce
- 8 small flour or corn tortillas
- 2 cups shredded cheddar cheese
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet, cook ground beef with chopped onion and garlic until browned. Drain excess fat.
- Add cumin, chili powder, salt, and pepper. Stir in enchilada sauce and simmer for 5 minutes.
- Warm tortillas slightly to make rolling easier.
- Spread a thin layer of meat mixture on each tortilla, roll up, and place seam-side down in a baking dish.
- Pour remaining enchilada sauce over the rolled tortillas and sprinkle with shredded cheese.
- Bake in the preheated oven for 20 minutes or until cheese is bubbly and golden.
- Garnish with fresh cilantro before serving.
Notes
- You can freeze these enchiladas before baking for later use.
- Use Greek yogurt instead of sour cream for a healthier topping.
