- 1 cup shredded provolone cheese
- 1 medium green bell pepper, sliced
- 1 medium onion, sliced
- 2 tbsp olive oil
- Salt and pepper to taste
- 1 tsp garlic powder
- 8 large low-carb or keto-friendly tortillas or dough
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat and cook sliced beef until browned. Add onions and peppers, sauté until tender. Season with salt, pepper, and garlic powder.
- Lay out tortillas or dough, evenly distribute beef mixture, then top with shredded cheese.
- Roll tightly into logs and place on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes or until golden and cheese is melted.

- Use thinly sliced steak for quicker cooking.
- Can be assembled ahead and baked fresh before serving.
- For extra flavor, add sautéed mushrooms or hot sauce.
