- 3 ripe bananas, mashed
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 3/4 cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 tablespoon ground cinnamon
- For the cinnamon swirl: 2 tablespoons sugar mixed with 1 teaspoon cinnamon
Instructions
- Preheat oven to 350°F (175°C). Grease a loaf pan.
- In a bowl, combine mashed bananas, melted butter, sugar, eggs, and vanilla extract.
- In another bowl, whisk together flour, baking soda, salt, and cinnamon.
- Gradually add dry ingredients to wet mixture until just combined.
- Pour half the batter into the loaf pan. Sprinkle half of cinnamon sugar mixture over the batter.
- Add the remaining batter and top with the rest of the cinnamon sugar. Swirl gently with a knife.
- Bake for 60-70 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool before slicing.
Notes
- Use very ripe bananas for extra sweetness.
- You can add chopped walnuts or chocolate chips for variety.
- Store at room temperature for up to 2 days or refrigerate for longer shelf life.
