Ingredients

  • 3 ripe bananas, mashed
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 3/4 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon ground cinnamon
  • For the cinnamon swirl: 2 tablespoons sugar mixed with 1 teaspoon cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. In a bowl, combine mashed bananas, melted butter, sugar, eggs, and vanilla extract.
  3. In another bowl, whisk together flour, baking soda, salt, and cinnamon.
  4. Gradually add dry ingredients to wet mixture until just combined.
  5. Pour half the batter into the loaf pan. Sprinkle half of cinnamon sugar mixture over the batter.
  6. Add the remaining batter and top with the rest of the cinnamon sugar. Swirl gently with a knife.
  7. Bake for 60-70 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow to cool before slicing.

  • Use very ripe bananas for extra sweetness.
  • You can add chopped walnuts or chocolate chips for variety.
