- 1 pound ground beef or Italian sausage
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 can (28 ounces) crushed tomatoes
- 4 cups beef or vegetable broth
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon red pepper flakes (optional)
- 8 lasagna noodles, broken into pieces
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Fresh basil or parsley for garnish
Instructions
- In a skillet, cook ground beef or sausage over medium heat until browned. Drain excess fat.
- Add chopped onion and minced garlic to the skillet and cook until translucent.
- Transfer the cooked meat and onion mixture to the crockpot. Add crushed tomatoes, broth, oregano, basil, and red pepper flakes.
- Cover and cook on low for 6-8 hours.
- About 15 minutes before serving, add broken lasagna noodles to the crockpot. Cover and cook until noodles are tender, about 15 minutes.
- Stir in shredded mozzarella and Parmesan cheeses. Serve hot garnished with fresh basil or parsley.
Notes
- You can substitute ground turkey or chicken for a leaner option.
- If the soup is too thick, add extra broth to reach desired consistency.
- For a vegetarian version, replace meat with mushrooms or lentils.
