Instructions
- Heat olive oil in a large skillet over medium heat. Add chopped onion and cook until translucent, about 3-4 minutes.
- Add minced garlic and cook for another minute.
- Stir in heavy cream, Parmesan cheese, dried thyme, salt, and pepper. Bring to a simmer.
- Add cooked chicken and chopped spinach to the skillet. Cook until spinach wilts and the mixture is heated through, about 3-5 minutes.
- If desired, fold in cooked rice or pasta for a more filling dish.
