- 1 cup pumpkin puree
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1/4 cup unsalted butter, melted
- 2 large eggs
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- For the swirl: 2 tablespoons cinnamon mixed with 2 tablespoons sugar
Instructions
- Preheat oven to 350°F (175°C). Grease a small loaf pan.
- In a bowl, mix pumpkin puree, melted butter, eggs, and sugars until smooth.
- In another bowl, whisk flour, baking soda, salt, cinnamon, and nutmeg.
- Combine wet and dry ingredients until just incorporated.
- Pour half of the batter into the pan, sprinkle with cinnamon sugar mixture, then add remaining batter on top.
- Swirl gently with a knife to create a marbled effect.
- Bake for 55-60 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool slightly before slicing and serving with butter.
Notes
- For a richer flavor, add a teaspoon of vanilla extract.
- Store leftovers in an airtight container for up to 3 days.
- Make ahead by preparing the batter and refrigerating overnight.
