- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 4 cups fresh spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- Salt and freshly ground black pepper to taste
- 1 teaspoon Italian seasoning
Instructions
- Preheat oven to 375°F (190°C).
- Season chicken breasts with salt, pepper, and Italian seasoning.
- Heat olive oil in a large skillet over medium-high heat. Sear chicken breasts until golden brown on each side, about 3-4 minutes per side.
- Remove chicken from skillet and set aside.
- In the same skillet, add garlic and cook until fragrant, about 1 minute.
- Add spinach and cook until wilted, about 2 minutes.
- Pour in heavy cream and bring to a simmer. Stir in Parmesan cheese and cook until sauce thickens slightly.
- Place chicken breasts in a baking dish. Pour spinach and cream sauce over the chicken.
- Sprinkle shredded mozzarella cheese on top.
- Bake in the preheated oven until cheese is melted and bubbly, about 20 minutes.
- Serve hot with your choice of sides.
Notes
- You can substitute Parmesan with Asiago or Pecorino cheese for variation.
- For a lighter version, use half-and-half instead of heavy cream.
- Serve with rice, pasta, or crusty bread to complete the meal.
