- 8 oz. dried chow mein noodles
- 1 lb. boneless skinless chicken breasts, sliced thin
- 2 tbsp. vegetable oil
- 1 bell pepper, sliced
- 2 carrots, julienned
- 2 cups bok choy, chopped
- 2 green onions, sliced
- 3 tbsp. soy sauce
- 1 tbsp. oyster sauce (optional)
- 1 tsp. sesame oil
- 2 cloves garlic, minced
- 1 tbsp. ginger, grated
Instructions
- Cook the chow mein noodles according to package instructions, drain, and set aside.
- Heat vegetable oil in a wok or large skillet over medium-high heat.
- Add sliced chicken and cook until browned and cooked through, about 5 minutes.
- Remove chicken and set aside. In the same wok, add garlic and ginger, sauté for 30 seconds.
- Add vegetables and stir-fry until tender but still crisp, about 3-4 minutes.
- Return chicken to the wok, add noodles, soy sauce, oyster sauce (if using), and sesame oil. Toss well to combine and heat through.
- Garnish with sliced green onions and serve hot.
Notes
- For extra flavor, add a splash of rice vinegar or a sprinkle of crushed red pepper flakes.
- You can replace chicken with tofu or shrimp for variety.
