- 1 1/2 cups crushed graham crackers
- 1/2 cup melted butter
- 8 oz cream cheese, softened
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 2 cups fresh blueberries
- 1 cup blueberry jam
- 1/4 cup water
- 1 tbsp lemon juice
Instructions
- Mix crushed graham crackers and melted butter. Press into the bottom of a greased 9×13 inch pan to form the crust.
- Beat cream cheese, powdered sugar, and vanilla until smooth. Spread over the crust.
- Combine blueberries, jam, water, and lemon juice in a saucepan. Bring to a boil, then simmer until thickened.
- Pour blueberry mixture over the cream cheese layer. Chill for at least 4 hours before serving.
Notes
For a firmer topping, refrigerate longer. Use fresh or frozen blueberries. You can add a sprinkle of crushed graham crackers on top for extra crunch.
