Instructions
- Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, and cinnamon.
- In another bowl, combine vegetable oil, eggs, vanilla, and sour cream. Mix well.
- Pour wet ingredients into dry ingredients and stir until just combined. Fold in chopped apples.
- Divide batter evenly among muffin cups. Sprinkle cinnamon sugar on top of each muffin.
- Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
- Allow muffins to cool slightly before serving.
