Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 carrots, sliced
  • 2 zucchinis, diced
  • 4 tomatoes, chopped
  • 2 cups spinach leaves
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and sauté until translucent.
  3. Stir in carrots and cook for 5 minutes.
  4. Add diced zucchinis and cook for another 5 minutes.
  5. Pour in vegetable broth and bring to a boil.
  6. Add chopped tomatoes, salt, and pepper. Reduce heat and simmer for 20 minutes.
  7. Stir in spinach leaves and cook until wilted.
  8. Garnish with fresh basil and serve hot.
