- 2 tablespoons olive oil
- 1 onion, chopped
- 3 carrots, sliced
- 2 zucchinis, diced
- 4 tomatoes, chopped
- 2 cups spinach leaves
- 4 cups vegetable broth
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and sauté until translucent.
- Stir in carrots and cook for 5 minutes.
- Add diced zucchinis and cook for another 5 minutes.
- Pour in vegetable broth and bring to a boil.
- Add chopped tomatoes, salt, and pepper. Reduce heat and simmer for 20 minutes.
- Stir in spinach leaves and cook until wilted.
- Garnish with fresh basil and serve hot.
Notes
- Can be customized with your favorite vegetables.
- Best enjoyed fresh but can be stored for 2 days in the refrigerator.
