Ingredients

- 2 tablespoons olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 cups kale or spinach, chopped
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and sauté until translucent, about 5 minutes.
- Stir in minced garlic and cook for another 1 minute.
- Add broth and bring to a boil.
- Reduce heat and simmer for 10 minutes.
- Stir in heavy cream and Parmesan cheese until melted and smooth.
- Add chopped kale or spinach and cook until wilted, about 3-5 minutes.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh basil.
Notes
- Adjust the richness by adding more or less heavy cream.
- You can substitute kale with spinach or Swiss chard.
- For extra flavor, add a squeeze of lemon juice before serving.
