- 4 large bell peppers (red, yellow, or green)
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tablespoon chopped fresh basil
- 1 tablespoon chopped fresh parsley
- 1 teaspoon olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove seeds and membranes.
- In a bowl, combine ricotta, Parmesan, garlic, basil, parsley, salt, and pepper.
- Stuff the peppers with the cheese mixture and place in a baking dish.
- Drizzle with olive oil and bake for 30 minutes until peppers are tender and filling is bubbly.
Notes
- You can add cooked quinoa or spinach to the filling for extra nutrition.
- Serve with a side salad for a complete meal.
