- 1 lb Italian sausage, sliced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup grated parmesan cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot, heat olive oil over medium heat. Add sliced sausage and cook until browned. Remove and set aside.
- In the same pot, sauté onions, garlic, carrots, and celery until tender.
- Return sausage to the pot, pour in chicken broth, and bring to a simmer.
- Stir in heavy cream and parmesan cheese, cook until heated through and slightly thickened.
- Season with salt and pepper, garnish with parsley, and serve hot.
Notes
- You can add spinach or kale for extra greens.
- Use turkey sausage for a leaner option.
- For a thicker soup, simmer a bit longer to reduce the broth.
