- 1 lb boneless, skinless chicken breasts, diced
- 1 package (16 oz) gnocchi
- 1 cup mixed vegetables (peas, carrots, corn)
- 1 cup chicken broth
- 1 cup heavy cream
- 1 cup shredded chicken (cooked)
- 1 sheet puff pastry or pie crust
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh thyme or parsley for garnish
Instructions
- Preheat oven to 400°F (200°C).
- In a large skillet, heat olive oil over medium heat. Add diced chicken, salt, and pepper, cooking until browned.
- Add mixed vegetables, cook for 3-4 minutes.
- Pour in chicken broth and heavy cream, stirring to combine. Add shredded chicken and simmer until slightly thickened.
- Transfer the filling to a baking dish. Cover with puff pastry or pie crust, sealing edges.
- Cut small slits on top for steam to escape.
- Bake for 20-25 minutes or until crust is golden brown.
Notes
- You can prepare the filling ahead of time and assemble before baking.
- Use store-bought puff pastry for convenience.
- Garnish with fresh herbs for added flavor.
