Instructions
- Heat olive oil in a large skillet over medium heat. Add diced onion and minced garlic, cook until translucent.
- Add ground beef and cook until browned. Season with salt and pepper.
- Stir in orzo pasta and cook for 2 minutes to toast lightly.
- Pour in beef broth and bring to a boil. Reduce heat to low, cover, and simmer for 10 minutes until orzo is tender.
- Stir in diced tomatoes and shredded cheddar cheese, cook until cheese melts and mixture is creamy.
- Garnish with chopped green onions before serving.
