- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 pound cooked chicken, shredded
- 1 package (16 oz) gnocchi
- 2 cups fresh spinach, chopped
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onion, garlic, carrots, and celery. Sauté until vegetables are tender.
- Pour in chicken broth and bring to a boil. Reduce heat and simmer for 10 minutes.
- Add cooked chicken and gnocchi to the pot. Cook according to package instructions, about 3-5 minutes.
- Stir in heavy cream and chopped spinach. Simmer for an additional 5 minutes until heated through.
- Season with salt and pepper. Serve hot with fresh bread.
Notes
- You can substitute spinach with kale or parsley for different greens.
- For extra flavor, add a pinch of red pepper flakes during sautéing.
