Instructions
- Preheat oven to 375°F (190°C).
- Cut a slit along the side of each chicken breast to create a pocket.
- In a skillet, heat olive oil over medium heat. Add garlic and mushrooms; cook until mushrooms are tender.
- Mix cooked mushrooms with cream cheese, salt, and pepper.
- Stuff each chicken breast with the mushroom mixture and secure with toothpicks if necessary.
- Place stuffed chicken breasts on a baking sheet and bake for 25-30 minutes or until cooked through.
- Garnish with fresh parsley before serving.
