- 1 pound Italian sausage
- 1 (16 oz) package gnocchi
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cups fresh spinach
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Grated Parmesan cheese for serving
Instructions
- In a large pot, cook Italian sausage over medium heat until browned. Remove and set aside.
- In the same pot, add chopped onion and garlic; sauté until translucent.
- Add chicken broth, Italian seasoning, salt, and pepper. Bring to a boil.
- Stir in gnocchi and cook according to package instructions, about 3-4 minutes.
- Reduce heat, stir in heavy cream and cooked sausage; simmer for 5 minutes.
- Add spinach and cook until wilted, about 2 minutes.
- Serve hot, topped with grated Parmesan cheese and fresh herbs if desired.

- You can substitute turkey sausage for a leaner version.
- For a gluten-free option, use gluten-free gnocchi.
