- 1 pound Italian sausage
- 1 cup potato gnocchi
- 4 cups chicken broth
- 1 cup heavy cream
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 cup spinach, chopped
- 1/2 cup grated Parmesan cheese
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add Italian sausage and cook until browned, breaking it apart as it cooks.
- Add chopped onion and minced garlic; sauté until translucent.
- Pour in chicken broth and bring to a simmer.
- Add gnocchi to the simmering broth and cook until they float to the surface, about 3-4 minutes.
- Stir in heavy cream and chopped spinach, simmering until heated through and spinach wilts.
- Season with salt and pepper, then sprinkle with Parmesan cheese before serving.

- Use full-fat heavy cream for a richer texture.
- Adjust seasoning with more salt and pepper as needed.
- Garnish with additional Parmesan and fresh herbs for extra flavor.
