- 1.5 lbs beef stew meat, cut into bite-sized pieces
- 4 cloves garlic, minced
- 1/4 cup unsalted butter
- 1 pound small potatoes, halved or cubed
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Fresh parsley for garnish
Instructions
- Place beef pieces in the slow cooker.
- In a saucepan, melt butter and sauté garlic until fragrant.
- Pour garlic butter over beef in the slow cooker.
- Add potatoes, paprika, salt, and pepper; stir to coat.
- Cook on low for 6-8 hours until beef is tender and potatoes are crispy.
- Garnish with chopped parsley before serving.
Notes
Use bone-in beef for added flavor. For extra crispiness, roast potatoes separately at 400°F for 20 minutes and add to the dish before serving.
