Instructions
- Start by dicing the chicken and chopping the onion and garlic. Rinse the rice thoroughly until the water runs clear. Set all ingredients aside for easy access.
- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Season the chicken with salt and pepper, then cook until golden brown and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
- Add remaining olive oil to the skillet. Sauté the diced onion and minced garlic until fragrant and translucent, about 3-4 minutes.
- Stir in the rinsed rice and cook for another 2 minutes, allowing the rice to absorb the flavors. Then, pour in the chicken broth and bring to a boil. Reduce heat, cover, and simmer until rice is tender, about 15 minutes.
- Once the rice is cooked, stir in heavy cream and shredded cheese, creating a luscious, creamy sauce. Return the cooked chicken to the skillet, mixing gently to combine. Cook for another 5 minutes to meld the flavors.
