A creamy, cheesy appetizer made with mashed potatoes, cheese, and herbs, baked into fluffy puffs with crispy edges.

Ingredients

  • 2 cups mashed potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 2 eggs
  • 1/4 cup chopped fresh chives
  • Salt and pepper to taste
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • Oil for frying

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine mashed potatoes, cheeses, eggs, and chopped chives. Season with salt and pepper.
  3. In a separate bowl, mix flour and baking powder.
  4. Add dry ingredients to the potato mixture until well combined.
  5. Using a spoon, form mixture into small puffs and place on the prepared baking sheet.
  6. Bake for 15-20 minutes until golden and crispy.
  7. Alternatively, for extra crispiness, heat oil in a pot and fry until golden brown, about 3-4 minutes per batch.
