- 2 cups mashed potatoes
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 2 eggs
- 1/4 cup chopped fresh chives
- Salt and pepper to taste
- 1 cup all-purpose flour

- Oil for frying
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, combine mashed potatoes, cheeses, eggs, and chopped chives. Season with salt and pepper.
- In a separate bowl, mix flour and baking powder.
- Add dry ingredients to the potato mixture until well combined.
- Using a spoon, form mixture into small puffs and place on the prepared baking sheet.
- Bake for 15-20 minutes until golden and crispy.
- Alternatively, for extra crispiness, heat oil in a pot and fry until golden brown, about 3-4 minutes per batch.
Notes
- You can add cooked bacon Bits or jalapeños for extra flavor.
- Serve with sour cream or spicy dipping sauce.
