- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts, sliced
- 1 tablespoon Cajun seasoning
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 8 ounces penne pasta
- 1 red bell pepper, sliced
- 1 green onion, chopped
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Season chicken slices with Cajun seasoning and cook until browned and cooked through, about 5-7 minutes.
- Add garlic to the skillet and sauté for 1 minute.
- Pour in heavy cream and chicken broth, bringing to a simmer. Cook for 5 minutes until slightly thickened.
- Add cooked pasta and sliced red bell pepper to the skillet, tossing to coat in the sauce. Simmer for 2-3 minutes until heated through.
- Garnish with chopped green onions, salt, and pepper. Serve hot.
Notes
- Adjust Cajun seasoning to taste for more or less spice.
- For added flavor, sprinkle with grated Parmesan cheese before serving.
