- 6 slices of bacon, chopped
- 1 small onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 16 oz gnocchi
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook bacon in a large pot until crispy, then remove and set aside.
- In the same pot, sauté diced onion and minced garlic until fragrant.
- Add chicken broth and bring to a boil.
- Stir in gnocchi and cook until tender, about 3-4 minutes.
- Reduce heat, add heavy cream and shredded cheddar cheese, stirring until cheese melts.
- Season with salt and pepper, then garnish with crispy bacon and fresh parsley before serving.
Notes
- You can substitute turkey bacon for a leaner option.
- For a thicker soup, add a splash of cornstarch slurry while simmering.
