Ingredients
- 400g (14 oz) penne or your favorite pasta
- 200g (7 oz) feta cheese block
- 1 pint cherry tomatoes
- 4 cloves garlic, minced
- 3 tbsp olive oil
- 1 tsp dried oregano or basil
- Salt and freshly ground black pepper to taste
- Fresh basil leaves for garnish (optional)
- Red chili flakes for a spicy kick (optional)
Instructions
- Preheat your oven to 400°F (200°C). Place the feta cheese in the center of a baking dish, surround with cherry tomatoes, drizzle with olive oil, and sprinkle garlic, oregano, salt, and pepper.
- Bake for 25-30 minutes until the cherry tomatoes burst and feta turns golden.
- Cook pasta in salted boiling water until al dente. Drain and set aside.
- Remove feta and tomatoes from the oven. Mash feta and roasted tomatoes into a creamy sauce. Add cooked pasta and toss to coat evenly.
- Garnish with fresh basil and red chili flakes if desired. Serve immediately.
