  • 1 pound Italian sausage, sliced
  • 4 cups chicken broth
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, cook sausage slices over medium heat until browned. Remove and set aside.
  2. Add onions, carrots, and celery to the pot, sauté until vegetables are tender.
  3. Stir in garlic, thyme, basil, salt, and pepper; cook for 1 minute.
  4. Pour in chicken broth and bring to a boil.
  5. Add tortellini and cooked sausage back to the pot, simmer until tortellini are tender.
  6. Garnish with fresh parsley before serving.
