- 1 pound fresh tortellini
- 1 pound Italian sausage, sliced
- 4 cups chicken broth
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, cook sausage slices over medium heat until browned. Remove and set aside.
- Add onions, carrots, and celery to the pot, sauté until vegetables are tender.
- Stir in garlic, thyme, basil, salt, and pepper; cook for 1 minute.
- Pour in chicken broth and bring to a boil.
- Add tortellini and cooked sausage back to the pot, simmer until tortellini are tender.
- Garnish with fresh parsley before serving.
Notes
- You can swap sausage for turkey or chicken for a leaner option.
- This soup is excellent with crusty bread on the side.
